Carrots and tomatoes are good sources of lycopene, said to be important for eye health. Top with chickpeas and feta for protein, and serve on a bed of cooked, seasoned bulgur wheat (also good for the eyes!).

Dressing
- Juice from 1/2 of a lemon
- 1 tablespoon chopped flat-leaf parsley
- 1/3 teaspoon ground cumin
- 1/4 cup olive oil
- Salt and pepper to taste
Salad
- 1 cup grated carrot
- 1 cup chopped tomatoes
- 1 small cucumber, peeled and chopped
- 1 cup canned chickpeas, rinsed and drained
- Crumbled feta cheese for garnish
- Cooked bulgur wheat, seasoned with salt and pepper
- Optional (baby spinach leaves or other tender greens)
Instructions
- Whisk all dressing ingredients together. Taste and adjust for seasoning.
- Combine carrot, tomatoes, cucumber, and chickpeas in a bowl.
- Drizzle with dressing and stir gently.
- Serve alone or on cooked bulgur or tender greens like baby spinach.
- Top with crumbled feta.
