20-20 Spring Salad


Carrots and tomatoes are good sources of lycopene, said to be important for eye health. Top with chickpeas and feta for protein, and serve on a bed of cooked, seasoned bulgur wheat (also good for the eyes!).

  • Juice from 1/2 of a lemon
  • 1 tablespoon chopped flat-leaf parsley
  • 1/3 teaspoon ground cumin
  • 1/4 cup olive oil
  • Salt and pepper to taste


  • 1 cup grated carrot
  • 1 cup chopped tomatoes
  • 1 small cucumber, peeled and chopped
  • 1 cup canned chickpeas, rinsed and drained
  • Crumbled feta cheese for garnish
  • Cooked bulgur wheat, seasoned with salt and pepper
  • Optional (baby spinach leaves or other tender greens)


  1. Whisk all dressing ingredients together. Taste and adjust for seasoning.
  2. Combine carrot, tomatoes, cucumber, and chickpeas in a bowl.
  3. Drizzle with dressing and stir gently.
  4. Serve alone or on cooked bulgur or tender greens like baby spinach.
  5. Top with crumbled feta.
