Fresh Grape Tomato & Watermelon Salad


Juicy watermelon is a must-have at summertime picnics and barbecues. Bring this fresh grape tomato & watermelon salad to your next gathering!


  • Watermelon
  • 8oz (~one box) grape tomatoes
  • Red wine vinaigrette
  • Fresh basil
  • Crumbled feta
  • 3/4 cup pine nuts
  • Pink Himalayan salt
  • Olive oil


  1. Lightly coat a medium saucepan with olive oil, add pine nuts and toast until golden brown (~5-10 minutes).
  2. Chop 3-5 large basil leaves.
  3. Cube 1/2 a large watermelon.
  4. Chop grape tomatoes in half.
  5. Toss watermelon and grape tomatoes with red wine vinaigrette.
  6. Top watermelon-tomato mixture with chopped fresh basil, crumbled feta, and toasted pine nuts.
  7. Grind a gentle amount of pink Himalayan salt on top for enhanced sweetness.
