Juicy watermelon is a must-have at summertime picnics and barbecues. Bring this fresh grape tomato & watermelon salad to your next gathering!
Ingredients:
- Watermelon
- 8oz (~one box) grape tomatoes
- Red wine vinaigrette
- Fresh basil
- Crumbled feta
- 3/4 cup pine nuts
- Pink Himalayan salt
- Olive oil
Directions:
- Lightly coat a medium saucepan with olive oil, add pine nuts and toast until golden brown (~5-10 minutes).
- Chop 3-5 large basil leaves.
- Cube 1/2 a large watermelon.
- Chop grape tomatoes in half.
- Toss watermelon and grape tomatoes with red wine vinaigrette.
- Top watermelon-tomato mixture with chopped fresh basil, crumbled feta, and toasted pine nuts.
- Grind a gentle amount of pink Himalayan salt on top for enhanced sweetness.
